Roasted Tilapia with Green Chile Crema

In deciding which of Susan Maria’s recipes to I wanted to try my hand at first, I lingered over the fish recipes. Fish… fish… ugh FISH!

Fish has always been hard for me in both in being unsure how to cook it or just finding it plain boring. This recipe is anything but boring. Tilapia is a very light and mild fish. I found nice big clean filets from the fish and seafood counter and they were $4.99 a pound! Pair that with an amazing sauce like this Green Chili Crema, which I literally wanted to sit and eat with a spoon by itself, and you have a marvelous meal. So here is my first try at a fish meal!

 

Tilapia with Green Chili Crema for Bariatric Eating

 

Roasted Tilapia with Green Chile Crema

Ingredients
  • Four 5 to 6 ounce tilapia filets
  • 1 teaspoon olive oil
  • Kosher salt and freshly ground black pepper
  • One 4-ounce can roasted mild green chiles, well drained or ½ cup roasted salsa verde
  • ½ cup Fage 0% Greek Yogurt
  • ¼ cup chopped cilantro
  • Juice of 1 lime, 1½ to 2 tablespoons
Instructions
  1. Preheat oven to 425 degrees.
  2. Rub the filets with the olive oil and season with salt and pepper.
  3. While the oven preheats, pulse the chiles, yogurt, cilantro, and lime juice in a food processor. Season with salt and pepper and set aside.
  4. Roast the filets in the oven for 6 to 8 minutes, until opaque throughout.
  5. Transfer fish to plates and spoon on the green chile crema. Serve with your favorite roasted vegetable.
